As for the gastronomic proposal, the Cimadolmo restaurant has always been shopping at Km0, even when no one was talking about it yet. That is, all the seasonal vegetables that end up on the plates, come from the vegetable gardens of the Treviso area: obviously the white and green asparagus IGP, the fresh salads and the radicchietto, the aubergines, the courgettes, the pumpkin, the green beans and the shell, red radicchio, tomatoes, peas. Only for what is not produced in the area, the route of food is lengthened, starting with the autumn mushrooms; the rice produced in Vercelli (on some special weekends 40 to 50 kilos are consumed) and obviously the meat to be grilled or skewered.
Meat of which the restaurant guarantees full traceability: fresh lamb from Ireland; the fillet from Argentina; the Irish angus, but the pig is from Italian farms as well as the farmyard animals. The main dish, which has attracted gourmands since 1987, is risotto with asparagus, a real must when it is in season (from April to June). It requires careful preparation of the vegetable so that it can be enjoyed whole accompanied by eggs or raw (if daily) dressed in a salad with raw spinach, cheese and extra virgin olive oil from Umbria, the only one used for dressings.
The desserts are homemade, from dry biscuits to ricotta and chocolate pies, up to strudel. Furthermore, Giorgio is famous among his customers for the fine Pata Negra, the prized Iberian acorn-fed ham which, when cut with a knife, is never missing on the tables of the Botte, served on generous slices of warm bread.
